Let’s face it: we all want to eat healthy…especially to model that same behavior we expect from our children. But veggies, aren’t always easy to incorporate into your meals if you’re a busy mom like me who always has someone to check on or something to finish around the house.
There’s the whole buying fresh and using within a few days to keep veggies from spoiling. You have to toss in a few other greens to get a variety of nutrients. And then you have to prep and include some flavors and dressings.
So these days, I prefer easy-to-cook, semi-homemade food. Food that won’t take too much time and is also packed with all the must-have nutrients I need to keep up with active kids and stay healthy for my nursing baby.
The Eat Smart Gourmet Salad and Stir Fry Kits are exactly what I need. They are fast to make and jam-packed with nutrients.
I was able to test out the salad kits, and was really impressed with the Wild Greens & Quinoa Salad. It was crunchy, tasty and packed with 7 superfoods: kale, beet greens, julienned broccoli, carrots, red cabbage, crispy quinoa and almonds, plus feta cheese and an avocado herb dressing.
As far as taste, I loved the mix of quinoa, greens and feta cheese which added a unique flavor blend. And the avocado dressing took it over the edge, making the pack my absolute favorite salad of the line.
I don’t always have time to prep a salad and incorporate it into my dinner meals…but with the Eat Smart kit it was 10x easier because everything was ready to go. All I had to do was combine the little packets and serve with my entree!
