Like most kids, my little ones are always begging for a tasty snack to satisfy their sweet tooth in the afternoon. While I don’t like to give in to their every whim and craving, I do let them indulge in a tasty treat for special occasions like St. Patty’s day.

Last year they devoured my Shamrock Pretzel Pops – which were a HUGE hit! So this holiday, I figure I can continue the trend with a super easy green Jell-O treat.

Because I’m a busy mom (and not to mention 8 and half months pregnant) fast and easy snacks are a top choice! I decided I would simply dress up a Jell-O cup with one of their favorite snacks: marshmallows.

What You’ll Need:

Green Jell-O Cups
Lucky Charms Marshmallows
Whipped Cream

As I mentioned this recipe is a no-brainer. You simply open the Jell-O, top it with whipped cream and sprinkle some Lucky Charms marshmallows over it.

Serve.

Kids will be mesmerized by the colorful treat and enjoy every bite…and of course, so will every other person craving a little sugar ;).

Shamrock Pretzel Pops {St. Patrick’s Day Recipe + Printable}

Chocolate-covered pretzels are a favorite snack of mine. I love the yummy flavor created when you blend sweet and salty foods. And after I experimented a bit at Christmas with my present pretzels, I knew I had to try something even yummier for St. Patrick’s Day, with Shamrock Pretzel Pops.

How to make chocolate-covered shamrock pretzels:

- Bag of Mini Pretzels (from your grocery store or buy here on sale)
- Wilton Green Candy Melts (buy here)
- Confetti Sprinkles
- Lollipop Sticks (buy here)
- Wax Paper (buy here)

Step 1.

After you gather all the ingredients, take the candy melts and place them in a microwave-safe dish. Melt according to package guidelines. I added about 1/4 a teaspoon of shortening (just a tad!) to help the candy soften. A tiny bit of butter works well too. I melted about half the bag for about 1 minute and 30 seconds, checking on it every 30 seconds to mix.

Step 2.

Dip each pretzel into the green chocolate with small tongs or fork. You can cover the pretzels completely or let the access chocolate drip off. My pretzels were getting a bit drenched, but they made for even tastier treats!

Step 3.

Arrange the pretzels into the shape of a shamrock on wax paper. You’ll need three pretzels for each shamrock, making sure all the pretzels touch — this will help them adhere as the chocolate dries. Place your stick on top of the pretzels and drizzle with more chocolate to seal. The more the better! Let set for several minutes and decorate with colorful sprinkles.

These shamrock pretzels were AMAZING!! They make a fun, festive St. Patrick’s Day treat for the kids or anyone else in the family. They even make cute little gift ideas if you wrap them in clear bags and attach these St. Patrick Gift tags to them.

DIY Rainbow Necklace for St. Patrick’s Day

If your child loves necklaces, this DIY rainbow necklace made from dyed pasta is sure to please. It’s a great St. Patrick’s Day craft for exploring colors and fine-motor skills with little ones.

Last St. Patrick’s Day, my toddler wasn’t so into crafting, so we settled for an edible sensory bin made from JELLO. It was a great activity for sensory stimulation that was a little messier than expected.

I decided that a pasta necklace was in order, because he seemed to be fascinated (i.e. ready to yank off) every piece of jewelry I would occasionally wear. Thought it would be fun for him to have his own this time.

To make the rainbow pasta I used several drops of liquid water color diluted with about a cup of water. Keep in mind the more dye you use, the darker and more vibrant the colors will be. I also used a teaspoon of vinegar in each color to allow the colors to absorb to the pasta quicker.I set the colors aside for several hours and then lay out to dry for another hour or two.

Help your child loop the pieces of pasta through the yarn. This activity is a great way for them to practice those fine-motor skills. It may take a few tries, but it’s amazing what a determined toddler can produce.

You can also practice colors like we did, by following a rainbow pattern. We started with red – yellow – green – blue and practice that pattern throughout.

For the centerpiece, I cut out a shamrock pattern from card stock and covered it with Mod Podge since it holds better than glue, and then sprinkled with glitter.

Poke a hole through the center and loop through the yarn. We added a Cheerio here to help keep the shamrock in place upon my toddler’s request ;).

Help your child finish adding the pasta and tie a double knot when complete.

Delicious Rainbow Buttermilk Cupcake Recipe

My toddler loves to explore outdoors, regardless of the cold, wet or rainy weather that has been the norm over the past few weeks. When we can’t get out to play, we like to get a little creative indoors. So today, I’m sharing a simple yet delicious rainbow cupcake recipe we made to celebrate the Spring weather and rainbows that seem to be in abundance when the rain showers meet the sunshine! (This also makes a great treat for St. Patty’s!)

Note: For homemade cupcakes, follow the steps below. For partially homemade, replace steps 2 & 3 with pre-made cake box instructions.

Delicious Rainbow Buttermilk Cupcake Recipe

Recipe Type: Dessert

Prep time: 10 mins

Cook time: 20 mins

Total time: 30 mins

Delicious rainbow buttermilk cupcakes for St. Patty’s Day.

Ingredients

3/4 cup unsalted butter, softened
1 1/2 cups sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup buttermilk
1 1/2 teaspoons vanilla

Instructions

Preheat oven to 350 and line muffin pans with paper liners or butter.
Beat the butter and sugar at medium speed with electric mixer until light and fluffy in a large mixing bowl. Add in eggs, one at a time.
Sift the flour with the baking powder and baking soda. Add one quarter of the dry mixture to the butter-egg mixture and then add the vanilla and a third of the buttermilk. Repeat beginning and ending with the flour mixture and scraping well after each addition.
Divide the batter into 5 bowls and use food coloring packets to tint the each new batter. To create a rainbow in honor of St. Patrick’s Day, use red, orange, yellow, green and blue.
Then pour a small amount of each batter into the cupcake pans, starting with the red, then orange, yellow, green and blue. Let the batter spread out and settle by itself.
Bake 25 to 30 minutes or until a toothpick inserted into center comes out clean.
Cool in pans of a rack for 5 minutes; Completely cool before frosting.

Enjoy the delicious and eye-catchy treats, sure to please anyone with a sweet tooth!

St. Patrick’s Day Jello Pot of Gold Sensory Activity

I’ve been searching the web for a fun and age-appropriate activity my almost 2 year-old toddler can partake in, especially as St. Patrick’s Day draws nearer. Although there are so many cute and crafty activities out there for kids, many of them require a bit more skill that comes with age.

That’s why I was so happy to find some inspiration in a St. Patrick’s Day sensory activity that didn’t involve glue, scissors or paints…just Jello and some creativity! I thought jello would be the perfect substance to work with considering it was edible and easy to clean up. I decided to put my own little holiday spin on it to make it more fun for my son.

Here’s what we used:

Lime/Green Jello
Container (to serve as the “Pot of Gold”)
Gold/Treasure (we used plastic dinosaurs and assorted candy)
Mini Marshmallows
Kool-Aid (to dye the marshmallows)
Tools for the “Treasure Dig” (mini shovel, spoon, cookie cutters)

Here’s what we did:

First, I decided to gather all the little items around the house that my son would consider “treasure”. He loves dinosaurs, so I decided to grab a handful of the little plastic ones and set them in a clear “pot of gold” container I bought at Party City. You can use any kid-friendly object or toys your children prefer.

Note: Although I decided to add some candy, I would steer clear of this as it can get super mushy and lose flavor (live and learn!).

I then poured the Jello mixture into the container and set in the fridge over night.

Once the Jello was settled and ready, I decided to top it off with rainbow marshmallows to complete the look. I used Kool-Aid packets in four colors (red, orange, yellow and green) to dye the marshmallows. Note: This ended up taking a bit longer than I anticipated so would recommend you simply buy colored marshmallows in the future!

Then I gathered some tools for the treasure dig and let my little guy go at it.

Not only did I get to introduce him to a new holiday, but he also had a great time digging around for treasure and exploring all the different objects.

I would definitely recommend this as an easy and educational St. Patrick’s Day alternative activity for toddlers!
