Looking for a healthy snack idea and easy way to keep your toddler or preschooler cool this summer? It’s not always an easy task, but today’s guest post shows you how a little creativity goes a long way using some everyday ingredients in your fridge!
It wasn’t that easy to find a healthy snack choice my picky eater would tolerate, but I finally came up with something that he absolutely loves. It’s painfully simple, and easy to make too! I promise this will be an instant hit with you and your children! {Bonus: It’s basically all fruit, so you can both indulge, guilt free!}
Pink Lemonade Ice Cream {For Kids!}
Ingredients
- 2 bananas {frozen for at least 2 hours in advance!}
- 5 strawberries
- 1 big chunk of mango
- A splash of frozen Minute Maid pink lemonade
{I went to Vons and found a bag with an assortment of frozen fruit, which is where I got the frozen strawberries and mango from, you obviously don’t need that same bag, just make sure you freeze your fruit beforehand! Otherwise you’ll end up with more of a smoothie than ice cream!}
Directions
1. Toss the banana pieces in a food processor and process until you have a regular ice cream consistency. If you over process it and it gets runny just toss it back in the freezer for an hour before continuing.
2. Add the strawberries and mango and pulse until they’re chopped up into small bits {for me they didn’t get “ice cream” like, so I just settled for little chunks and that worked just fine!}
3. Slowly add a little bit of the frozen pink lemonade, until you get a desired color/consistency/taste!
4. Then I usually let it freeze up a bit in the freezer for another hour or two before serving! That’s it!
